I would like to change the number of galleries in block The most recently-added 10 Galleries.
How to do this?

Change the value of param to the amount of galleries you wish to display.

One more question.
In language file 'galeries.ini' I found this:
BLOCK_main_recent_galleries_PARAM_param=The number of galleries to show. Default: '10'.
Does it means, that somewhere I could change this parameter in normal way(not by editing block in comcode page)?

HI Igr! Editing the amount of galleries shown (param value) is the normal way for configuring this block. Editing the block php code for example would lock you in to the hardcoded value. You will find that the majority of OCP blocks take configuration options in this manner; makes for a very flexible system and avoids the "one size fits all" syndrome. Here is a good tutorial outlining the available blocks (most of this info is also available in the add block assistant):
