Is their a Addon that could do the following:
I want a List of items that users would select and the system would update showing that someone already selected it, so the next user would need to select from what's left on the list.

There is a lot of Addons, but knowing what will do what I want without installing it, is not easy.

This sounds very particular, so you'd probably need a programmer.

I can't think of anything built in that would really do that automatically. You could try and fudge it somehow, e.g. add each item as a catalogue entry, and make the person who wants it be the first to comment on it. Or allow people to edit entries and unvalidate the one they want. That kind of thing isn't so user-friendly though, to say the least ;).

If we added the ability to limit the number of times a custom pointstore product could be sold (to one in your case), that'd do it. I like that idea so have added to the tracker:
